Manual harvest of botrytisaffected grapes in November. Selections of berries at the sorting table.
The fermentation in French oak barrels. When alcohol level reaches a certain concentration, the fermentation stops, leaving naturally sweet wine. After fermentation, short ageing on fine lees (3 months), racking and aging in the barrels utill bottling.
Muscat à petits grains (Apianae).
6 months in oak barrels
Antique gold colour.
Intense aromas of overripe fruits and honey, together with hints of smokiness and vanilla.
Dense with good acidity which perfectly offsets the high sugar content of the wine. Long, pleasant and lingering aftertaste.
